Egg Frittata
Wake up with a voracious appetite but don't have time for an elaborate meal? Here's a simple egg frittata recipe you can build on year-round.
Equipment

Ingredients
- 1 ½ tbsp Giadzy olive oil
- 1 sweet onion yellow, walla walla, or white, large, thinly sliced
- 8 eggs
- ⅔ cup heavy cream
- 4 ¼ oz Parmigiano-Reggiano cheese grated
- 1 teaspoon salt
- balsamic vinegar to drizzle on top
Instructions
- Grate the Cheese: Wash your hands with soap and water. Use a box grater to grate the cheese. Place it in a clean bowl and set it aside.
- Slice the Onion: Use a knife and cutting board to slice the onion. Place it in a clean bowl and set it aside. Wash your hands if you want to avoid irritating your eyes.
- Warm the Olive Oil: Add the olive oil to the pan and heat over medium-low heat. This is a good time to preheat the oven to 325 degrees Fahrenheit.
- Cook the Onions: When the oil is hot, add the onions to the pan. Cook until they are translucent and light brown. Stir the onions constantly while they are cooking. Remove the pan from the heat and turn off the stove. Let the onions cool for 5 minutes.
- Combine the Eggs, Cheese, Cream, & Salt: While the onions are cooling, crack the eggs into a clean bowl. Add the grated cheese. Use a measuring cup to add the cream to the bowl and a measuring spoon to add the salt. Give it a stir.
- Add the Egg Mixture to the Onions: Pour the egg mixture into the pan with the onion. Use a fork to spread the onion evenly throughout the egg frittata.
- Cook for 25 Minutes in the Oven: Place the pan in the oven. Cook for 25 minutes or until the center has a slight jiggle and the top is golden brown. If the top becomes too dark, you can cover it with foil. Turn off the oven when finished. If you're using a wood burning oven, you can add a small pot of boiling water to the oven to create steam and prevent overdrying the frittata. Turn off the oven when finished.
