"We offer two frittatas every morning. One made with caramelized onions and the other with seasonal vegetables. Sweet onion frittata is a classic in Modena and it is served with a drizzle of extra-aged balsamic vinegar. The acidity plays very well with the sweetness of the onions."

Slow Food, Fast Cars
This satisfying and simple focaccia recipe is from Slow Food, Fast Cars by Massimo Bottura, chef and restaurateur, Lara Gilmore, the creative curator at Casa Maria Luigia, and Jessica Rosval, the head chef.
Breakfasts around here have become a religious affair, the ritual of their preparation is precious, revered, not to be tampered with. We imagine the surprise of our guests waking up to the scent of breakfast in the air.
The smoke from the oven mingles with Emilian morning haze as we watch them cross the courtyard on chilly mornings to discover the breakfast buffet arranged in front of the open kitchen.
Guests gather at communal tables surrounded by colorful prints and honey-colored wood floors. They are invited to stay as long as they want. This is Emilia-Romagna.
Enjoy a second cappuccino, another piece of cotechino and feel like it's Christmas morning every day of the year.

Free European & American Vehicles Language & Sorting Activity
Grab your free vehicle sorting activity above. Kids can sort the cards into rows or columns using the heading cards: European and American. The colors of the cards provide a control of error so that kids can self-correct when completing this work independently.
These sorting cards also make excellent three-part cards for introducing vocabulary related to vehicles. To use these as 3-part cards, simply print two copies of the printable and then cut the labels off the cards on one of the copies. Children can match the picture and then match the label as they show readiness.
They can also be used to practice object-to-picture matching if you have a collection of cars to play with.

If you're Noah, you run to the bathroom to wash your hands because you know what it feels like when you touch your eyes afterward.
Warm the Olive Oil
Add the olive oil to the pan and heat over medium-low heat. This is a good time to preheat the oven to 325 degrees Fahrenheit.
Cook the Onions
When the oil is hot, add the onions to the pan. Cook until they are translucent and light brown. Stir the onions constantly while they are cooking.
Remove the pan from the heat and turn off the stove. Let the onions cool for 5 minutes.

My kids like theirs lightly browned, but you can enjoy this frittata with a deep golden brown top. John ditched the fork and ate his like pizza.
If the top becomes too dark, you can cover it with foil. Turn off the oven when finished.
If you're using a wood-burning oven, add a small pot of boiling water to the oven to create steam and prevent overdrying the frittata.
Drizzle balsamic vinegar on top to complement the sweetness of the onion.
