"This classic Roman soup means 'little rags,' which refers to how the egg and semolina will look once they are cooked."

- Clifford A. Wright

When I don't have a lot of time for an elaborate recipe, and I just wanna enjoy my time with the kids, I go with what I know. Stracciatella, or Roman Egg-Drop Soup, is a very simple recipe that drops an egg, semolina flour, and Parmesan cheese mixture into hot chicken or vegetable broth.

The result is a flavorful soup with "little rags" that will satisfy us so we can focus on our time together. Plus, it's fun to say "Stracciatella."

An Italian Feast

This stracciatella recipe comes from An Italian Feast: The Celebrated Provincial Cuisines of Italy from Como to Palermo, a Culinary Vade Mecum Illustrated with More than 800 Recipes from Italy's 109 Provinces and 20 Regions by Clifford A. Wright.

With its position as the capital of Christianity, Rome was always a destination for pilgrims and travelers. Perhaps because of this influx of religious pilgrims, the love of the table in Lazio seems greater than in other regions.
