Doma Cookbook
This feta cheese sauce recipe comes from Doma: Traditional Flavors and Modern Recipes from the Balkan Diaspora by Spasia Pandora Dinkovski.
I never intended to start a business, but it was the correlation between the all-night burek shops (burekdzilnicas) in the Balkans and the pizza-slice shops of Brooklyn, and what they bring to communities, that really got me thinking.
So I ordered some food boxes and designed a logo while re-watching Mystic Pizza for the millionth time, and lo and behold, Mystic Burek was born.
I baked my pies in a little two-shelf domestic oven at home, selling them via Instagram and delivering them all over London in a little pink trolley until my little Brixton kitchen could take it no more. I moved the business to a rented commercial space, hustling hard and travelling across the city to serve my food at sell-out events; a combination of filo pies and Balkan-British dinners.
I fought long and hard to find my own space - a shop in Southeast London - never once stopping for breath; a resilience passed down to me not only by my ancestors but also my parents.

How to Make Feta Sauce

Ingredients
- feta cheese
- crème fraîche
- parsley
- tarragon
- garlic

Peel the Garlic
Wash your hands with soap and water. Use a knife and a cutting board (if needed) to peel the garlic.

Transfer it to the Blender
Add the garlic to the blender.

Add the Feta and Crème Fraîche
Use a kitchen scale as needed to weigh the feta cheese. Transfer it to the blender. Repeat with the crème fraîche.

Add the Parsley and Tarragon
Grab a handful of parsley. Remove the stems as desired but it's not necessary. Add the parsley to the blender. Repeat with the tarragon.


Blend Until Smooth
Place the lid on the blender. Blend on high until smooth. Use a spatula as needed to scrape the sides of the blender. Transfer the feta cheese sauce to a bowl.


Serve on the side with a delicious snack or drizzle it on top.
