"I often make rajma simply to make rajma nachos. The stewy, almost jammy kidney beans make for a spectacular nacho base, especially when you need to switch it up from the usual rotation of black beans or ground beef. The toppings on these nachos are pretty standard - lots of cheddar cheese (please shred your own rather than buy the pre-shredded stuff), diced onion, avocado, and pickled jalapeños - plus two types of chutney and a chaat masala - spiked yogurt sauce (they are Indian nachos after all)."

How to Make Fully-Loaded Nachos

Ingredients

  • tortilla chips
  • rajma - you won't stop finding ways to enjoy this rajma
  • cheese - cheddar cheese is the perfect topping for your nachos. Shred it yourself for the best results
  • onion - grab your favorite type of onion
  • jalapeño - the pre-sliced jalapeño will save you some time and effort
  • avocado - organic or not, you can't go wrong with avocado for your fully-loaded nachos
  • yogurt - plain full-fat yogurt is recommended for these fully-loaded nachos
  • water
  • chaat masala - make your own chaat masala with Kesari Amchur, Black Salt, Cumin, Coriander, Salt, Fennel, Hing, Jaggery, Dried Mint, Sumac or try this chaat masala blend
  • tamarind chutney - store-bought or homemade will work
  • cilantro-mint chutney - store-bought or homemade will work

Prep the Onion, Jalapeño, & Avocado

Wash your hands with soap and water. Use a child-friendly knife and cutting board to slice the onion, jalapeño, and avocado.

Line a Baking Sheet

Line a baking sheet with aluminum foil. Preheat the oven to 350 degrees Fahrenheit.

Add the Chips, Rajma, and Cheese

Add the chips on top of the tray. Use a spoon to layer the rajma on top. Sprinkle the cheese on top. Bake the nachos for 5 to 8 minutes.

Mix Up the Yogurt, Water, & Chaat Masala

Use a measuring cup to measure the water and add it to the bowl. Use a measuring spoon to measure out the chaat masala needed and add it to the bowl. Scoop the yogurt into the bowl and mix it all together.

Drizzle the Yogurt Mixture Over the Nachos

Use a spoon to drizzle the yogurt mixture over the nachos.
