This homemade fries recipe comes from The Prairie Homestead Cookbook: Simple Recipes for Heritage Cooking in Any Kitchen by Jill Winger.

Splashing in the creek, chasing fireflies at dusk, and living life at the end of a dirt road. Nope, that wasn't my childhood. I wasn't raised a homesteader. In fact, I didn't even grow up out in the country.

Like many folks, I have homesteaders and farmers on branches of both sides of my family tree, but my childhood was spent in a regular little neighborhood on a small lot in rural northern Idaho - no acreage, no chickens, and no big red barns.

My upbringing may have been suburban, but I had a fascination with all things country right from the start. While all my friends were playing dress-up, I pushed a wheelbarrow around our tiny yard and pretended and pretended I was living on a farm and mucking stalls. (Yes, really.) The other girls giggled about their latest crush while I doodled sketches of my future barns and corrals.

    Jill recommends russet potatoes for making homemade fries but says red or Yukon Gold potatoes will work just as well.

    How to Make Homemade Fries in the Oven

    Ingredients

    • potatoes - russet potatoes are preferred but you can also use red or Yukon Gold
    • oil - grab your favorite olive oil or other neutral cooking oil
    • parsley - dried parsley adds flavor to these homemade fries
    • salt - fine sea salt is recommended but use what you have on hand
    • paprika - we like this Castillo Spanish Pimentón
    • onion powder
    • garlic powder
    • black pepper - add freshly ground black pepper to these easy homemade fries

    Equipment

    • prep bowls
    • Santoku knife or apple slicer
    • butcher block
    • measuring spoons
    • measuring cup
    • sheet pan

    Slice the Potatoes

    Wash your hands with soap and water. Preheat the oven to 425 degrees Fahrenheit. Cut the potatoes into wedges using a knife or apple slicer. Transfer them to a large bowl.

    Combine the Potatoes with the Other Ingredients

    Measure the oil using a measuring cup and add it to the bowl. Then, use measuring spoons or your estimation skills to add the remaining ingredients to the bowl. Toss the ingredients to coat evenly.

    Transfer the Seasoned Potatoes to a Sheet Pan

    Transfer the seasoned potatoes to a sheet pan or two. Place them in the oven.

    Bake for 30 to 40 Minutes

    Bake the potato wedges for 30 to 40 minutes. They should be browned and crispy on the edges when finished. Flip them one time while they're cooking for the best results. Turn off the oven.

      • 3 lbs potatoes 5 or 6 medium to large potatoes, cut into wedges
      • ¼ cup extra-virgin olive oil
      • 2 tablespoon dried parsley
      • 2 teaspoon fine sea salt
      • 2 teaspoon paprika
      • 2 teaspoon onion powder
      • 2 teaspoon garlic powder
      • ½ teaspoon fresh black pepper

      Instructions
